  Smoky Chipotle Tomato & Eggs

  Serve your eggs a different way. Spice them up for this irresistible brunch favourite.

  1. Heat cooking oil in a skillet, add the onions and cook until softened. Add garlic and cumin, cook for another 2 minutes.
  2. Add tomatoes and Chipotle Cooking Paste to the pan.
  3. Create a small dip for each egg and crack the eggs in to the sauce.
  4. Cover the skillet and simmer until eggs are cooked to your liking. Season to perfection with salt and pepper.
  5. Serve with crusty bread and sprinkle with chopped coriander.

  Fajita Roast Chicken

  Create a roast dinner with a Mexican twist. Delicioso!

  1. Mix the butter and half of the Rio Grande Medium Fajita Seasoning mix together.
  2. Roast the chicken until half an hour from being ready.
  3. Take the chicken out the oven, spread the butter mix under the skin of the chicken, taking care not to rip the skin.
  4. Rub the remaining Fajita Seasoning inside the chicken.
  5. Roast the chicken for a further half an hour until cooked, covering with foil if necessary.
  6. Serve with fluffy roast potatoes, gravy and winter vegetables.
