If you can´t get enough Mexican, Migas is the perfect breakfast or brunch dish for you. Creamy scrambled eggs topped with chips, salsa, avocado and coriander. Try for yourself!
- Finely chop the onion. Fry the onion and Jalapeños in the olive oil over a medium heat.
- Whisk together the eggs, grated cheese and salt.
- Pour the beaten egg mixture into the pan and leave it to stand for approx. 30 seconds. Then gently stir occasionally using a wooden spoon,until the egg mixture is just cooked and still creamy.
- Top with crushed tortilla chips, Salsa, sliced avocado and chopped coriander (or chives).
Mexican Migas is the ultimate simple breakfast! Try it for brunch with bacon, chorizo and fried potatoes!
