Goats Cheese Fajita filled with Spiced Chicken and Walnuts

A wonderful twist on the classic Mexican fajita, filled with a delicious combination of saltiness, cheesiness and honey sweetness. Serve the fajita topped with fresh mango and coriander.

|500 g chicken breast fillet|
|1 red pepper|
|1 tbsp oil|
|1 sachet Santa Maria Medium Fajita Seasoning Mix|
|2 tbsp honey|
|200 g goats cheese|
|8 Santa Maria Plain Flour Soft Tortillas|
|50 g walnuts|
|100 g rocket|
How to prepare
Cut chicken into strips and coat in oil and Seasoning Mix. Heat a heavy based frying pan until very hot and add the chicken and peppers. Fry for about 3 minutes until well browned, add honey, crumbled goats cheese and walnuts.
Serve the chicken and red pepper in warmed tortillas.
Top with mango, rocket and roughly chopped coriander.
