Pineapple Fajita Pizza

A delicious chicken pizza with juicy pineapple and plenty of vegetables. It has a chilli kick with great flavour.

|1 tbsp Oil|
|500 g Chicken breasts cut into strips|
|1 sachet Santa Maria Fajita Seasoning Mix Medium|
|1 Red onion, finely sliced|
|1 Red pepper, cut into strips|
|0.5 Fresh pineapple, diced|
|4 Santa Maria Chilli & Jalapeño Soft Tortillas|
|150 ml Santa Maria Classic Mexican Salsa Medium|
|250 g Cheese, grated|
How to prepare
Pre-heat the oven to 220°C. Heat the oil in a frying pan and brown the chicken strips. Add the onion, pepper and Fajita seasoning mix. Leave to sizzle for about 3-4 minutes, add the pineapple chunks.
Divide the salsa equally between the tortillas and add half the cheese. Then add the fajita filling and top with the rest of the cheese.
Place the pizzas on a baking tray and bake in the oven on the lowest shelf. Bake for 5-8 minutes, or until the cheese has melted and turned a lovely golden colour.
Serve immediately with a delicious green salad.
