There are hundreds of recipes for different salsas. Here is one of our favourites. Sweet, sharp and crunchy, this makes a wonderful accompaniment to all sorts of grilled fish and meat, cheese and salads, as well as classic Mexican foods.

Salsa
1 Large mango, peeled and chopped
1 Red onion, finely chopped
1 Small bunch of coriander, chopped
2 Limes, zest and juice
2 cm Fresh ginger peeled and finely chopped
0.25 Cucumber, finely chopped

How to prepare

  1. Mix together all ingredients and season to taste.

  2. Serve chilled.

Garnish with red or green jalapeños (finely chopped) to taste.

Chef's Tip:

This salsa is fantastic as a dip or as a side dish with shellfish or fish.
