Goats Cheese Fajita filled with Spiced Chicken and Walnuts

A wonderful twist on the classic Mexican fajita, filled with a delicious combination of saltiness, cheesiness and honey sweetness. Serve the fajita topped with fresh mango and coriander.

|Goat Cheese Fajita|
|500 g Chicken breast, cut into strips|
|1 Red pepper|
|1 tbsp Butter or oil|
|1 Sachet Santa Maria Fajita Seasoning Mix Medium|
|2 tbsp Honey|
|200 g Goats cheese, crumbled|
|1 packet Santa Maria Plain Flour Soft Tortillas|
|50 g Walnuts, pieces|
|100 g Rocket|
|1 Mango, finely diced|
|3 tbsp Fresh coriander, roughly chopped|
How to prepare
Coat chicken in oil and seasoning mix. Heat a heavy based frying pan until very hot and add the chicken and peppers. Fry for about 3 minutes until well browned, add honey, goat's cheese and walnuts.
Serve the chicken and red pepper in warmed tortillas (see pack for instructions).
Top with mango, rocket and roughly chopped coriander.
