| 500 g Fresh Salmon Fillet | 
| 2 tbsp Santa Maria Peruvian Chilli & Lime | 
| Tomato Salad |

| 250 g Cherry tomatoes | 
| 20 g Fresh dill | 
| 3 Spring onions, finely sliced | 
| 1 tbsp Santa Maria Peruvian Chilli & Lime | 
| 1 tbsp Olive oil | 
How to prepare
- Preheat the oven to 150°C/Gas Mark 2. Rub the Chilli & Lime spice all over the salmon and place in an ovenproof dish.
 - Cook the salmon in the oven for about 20 mins until cooked.
 - Cut the tomatoes into half and mix with the dill, spring onions, Chilli & Lime spice and a drizzle of olive oil.
 - Sprinkle the salad over the salmon and serve immediately.
