A slightly fruity sauce with heat from the guajillo chilli. Poured over a selection of vegetables and served with rice. Why not try substituting with your favourite veggies?
- Heat the cooking oil in a frying pan. Add the diced aubergine and sliced red pepper and stir fry until vegetables have softened.
- Reduce the heat, drain and rinse the butter beans and add them to the pan. Pour over the contents of the Santa Maria Mexican Spiced Tomato Sauce and stir well.
- Simmer for a few minutes, until piping hot. Serve with rice and salad.
Tip: This sauce is delicious poured over any mix of vegetables.
