Mexican Spiced Aubergines, Peppers and Butter Beans

A slightly fruity sauce with heat from the guajillo chilli. Poured over a selection of vegetables and served with rice. Why not try substituting with your favourite veggies?

  1. Heat the cooking oil in a frying pan. Add the diced aubergine and sliced red pepper and stir fry until vegetables have softened.
  2. Reduce the heat, drain and rinse the butter beans and add them to the pan. Pour over the contents of the Santa Maria Mexican Spiced Tomato Sauce and stir well.
  3. Simmer for a few minutes, until piping hot. Serve with rice and salad.

Tip: This sauce is delicious poured over any mix of vegetables.
