Grilled chicken with marinated summer veggies

A lovely dish for your barbecue! Juicy chicken on a bed of crispy grilled marinated vegetables and smooth ricotta cheese.

Marinated veggies
1 zucchini
1 bunch green asparagus
1 bag Santa Maria BBQ Marinade for Vegetables Balsamic & Herbs
Grilled chicken
500 g chicken thigh fillets
1 dl Santa Maria BBQ Grilloil Chili
Accompaniments
70 g baby spinach
250 g ricotta cheese
1 tbsp olive oil
Santa Maria Tellicherry Black Pepper

How to prepare

  1. Prepare and heat up the grill. 
  2. Place thinly sliced zuchini and green asparagus in a bowl and pour over the marinade so everything is covered. Marinate for about 10 mins. 
  3. Grill the vegetables and turn over so they have an even colour.
  4. Marinate the chicken in grill oil and place on the barbecue. Turn the fillets over after about 7 mins and brush with extra grill oil. Grill on both sides until the chicken is cooked through.
  5. Place the baby spinach and the warm vegetables on a large plate.
  6. Spoon the ricotta cheese on to the vegetables. Drizzle over the olive oil and season with pepper.
  7. Add the grilled chicken pieces.
